CUCUMBER SOUP

CUCUMBER SOUP INGREDIENTS:
  • 2 tbsp. butter
  • 2 tbsp. grated onion
  • 1/4 tsp. curry powder
  • 1 c. peeled, diced raw cucumbers
  • 1 can cream of mushroom soup
  • 1 can chicken broth
  • 1/2 c. milk
  • Salt and pepper to taste
CUCUMBER SOUP INSTRUCTIONS
Melt butter, saute onion until soft. Stir in curry, add cucumber and enough chicken broth to simmer until cucumber is tender; about 5 minutes. Add soup and milk. Bring to boiling point. Serve hot or cold.
